Time waits for no peach

It is hard to buy ripe peaches here in New England. Maybe it is hard everywhere, I am not an accomplished traveller so I really couldn't say. So you do what you must do, you buy some peaches and wait for them to ripen. And when they do, you must spring into action.

My peaches came due today. Tonight's effort comes from Pillbury's "The Complete Book of Baking", Georgia Peach & Pecan pie. It is quite tasty, especially when warm. Feel free to envy me.

We missed a pie opportunity this weekend. When we left Chatham too early on Sunday morning, Marion's Pie Shop had not yet opened. D'oh!

We had two nice beach days, Friday at South Beach, and Saturday at Hardings Beach. Read the book "Guitar, An American Life" by Tim Brookes.

Rainy Day Pie #12 & 35

Jeff sweet-talked me into the two of us baking a pie. I divulged all of my crust making secrets and together we came up with a cherry blackberry lattice top pie. As you can see from the picture, it went quickly.

Now we just have to work on the filling. What do we need to keep the filling from being so soupy? Corn starch? Tapioca? Patience?
